Summary

Acquire the advanced cooking skills required to produce complex patisserie items and take a leading role in commercial kitchen environments.

During the course of this one-year programme you'll acquire the advanced preparation, cookery and presentation techniques to confidently plan and produce a wide range of complex dishes including hot and cold desserts, gateaux and torten. You'll also learn effective methods for planning and monitoring workflow and supplies, and strategies for managing staff and operations to meet performance targets.

Career Opportunities

This qualification will enable you to work as a senior chef in a range of professional kitchens.

Study Pathways

Graduates with this qualification can add to their expertise by completing the Cookery strand of the New Zealand Diploma in Cookery (Advanced) (Level 5).

Entry criteria

New Zealand Certificate in Cookery (Level 4) or equivalent

If you have undertaken examinations other than NCEA (e.g. International Baccalaureate, Cambridge Examination), Ara will assess your qualification for academic entry equivalency.

IELTS test - Academic score of 5.5 with no band score lower than 5

SPEAKING - 5.0
READING - 5.0
WRITING - 5.0
LISTENING - 5.0

TOEFL Paper-based test (pBT) - Score of 550 (with an essay score of 5 TWE)

TOEFL Internet-based test (iBT) - Score of 46 (with a writing score of 14)

Cambridge English Qualifications - B2 First or B2 First for schools with a score of 162. No less than 154 in each skill

Pearson Test of English (Academic) - PTE (Academic) score of 42 with no band score lower than 36
